Here’s a copy of my Sweet and Spicy Bacon Recipe to preview from my new cookbook.
Everything is better with bacon! This sweet and spicy bacon is a real crowd pleaser! It makes a great grilled cheese sandwich!
Serves 4-6
1 package 12-16 oz thick cut bacon (Oscar Mayer)
1/8 -¼ Korean coarse ground red pepper* (gochugaru available in Korean grocers)
¼ cup light brown sugar
¼ cup honey (Golden Blossom brand)
3-4 tablespoons cold water
Heat a broiler on low. Layer the bacon on a wire rack inserted on a baking sheet lined with heavy-duty aluminum foil. Spray the wire rack with nonstick spray for easy cleanup. Pre-cook bacon on each side until nearly done about 4-6 minutes per side.
In a medium bowl, mix Korean ground red pepper, brown sugar, honey, and 3-4 tablespoons cold water to make a thick spreadable glaze. Spread glaze on pre-cooked bacon on one side only and broil until bubbly and crisp 1-2 minutes. Watch carefully so the bacon doesn’t burn. Let bacon cool on the baking rack 15 minutes or longer, otherwise, the glaze will slide off. You will have about 14-16 pieces. Break off any burned edges. Cooked bacon can be left out at room temperature for a day. Store in airtight container 3-4 days in refrigerator.
